The company occupies an area of 46,000 square meters, of which 21,000 are indoors. It is located in Tuscany, between Pisa and Florence in the lower side of the Arno valley, beside and under the shelter of the Pisan Mountains, with Monte Serra as it's background (1,000 meters above sea level), fully enjoying the fantastic microclimate of this small area, marked with mitigated winters due to the proximity of the Tyrrhenian sea only 20 Km away. The typical breeze, always present and streamed by the Pisan Mountains, minimises phenomena such as fog and high humidity. During the summer this breeze makes the weather very pleasant, and ensures that it never reaches very torrid temperatures.
These weather aspects significantly facilitate the particular production methods implemented at BiancoForno. All the pastry products, puff pastry above all, are negatively affected by humid environments and excessive sudden changes in temperature. The pastry section in our facility has been purposely built and was designed in compliance of the specific and unique production techniques employed by BiancoForno. Furthermore, the entire company is constantly air conditioned. This is a perfect blend between production methods and territory characteristics, establishing the absolute uniqueness of our products and in particular that of our puff pastry
